The local soil, which is more clayey than further upriver, is also shaped by the proximity of the sea. The area has fewer layers of pebbles, known as graves, compared to the more southern regions, resulting in a dominantly heavy soil. These conditions contribute to the distinctive ‘terroir’ and characteristics of Saint-Estèphe wines, which include a deep colour and a structured, powerful, spicy and tannic profile. Although these wines may seem a bit harsh or rustic in their youth, over time they develop a softer and more refined flavour. However, sandy and limestone vineyards produce softer and more delicate wines.

The Saint-Estèphe AOC/AOP covers the entire commune of the same name and covers around 1,229 hectares of vineyards. Cabernet Sauvignon (approx. 49%) and Merlot (approx. 43%) dominate here, while Cabernet Franc (approx. 4%), Petit Verdot (approx. 3%), Malbec (approx. 2.5 ha.) and Carmenère (approx. 0.5 ha.) are also represented. These grape varieties are carefully selected for the different plots, where the many microclimates and soil conditions create a wide range of styles and flavors. Production in Saint-Estèphe is spread over around 74 properties, including 5 Cru Classés (such as Cos d'Estournel, Montrose, Calon Ségur, Lafon Rochet and Cos Labory), 19 Cru Bourgeois, 1 Cru Artisan and 32 independent chateaux. In addition, 17 winegrowers supply their grapes to the area's only cooperative.

In April 2020, amidst the uncertainty of the pandemic, LVMH launched 300 sets of a limited edition collector's box to support restaurant workers.
