The old vines grow in mineral-rich, nutrient-poor soil with high levels of iron and limestone – conditions that force the plants to perform at their best and produce grapes with maximum concentration and intensity.\u003c\/p\u003e\n\n\u003cp\u003e The harvest is done manually, and only the best grapes are selected through a thorough sorting. Fermentation takes place in large cement tanks on the natural yeast that comes with the grapes from the field. The wine is then matured for 14 months in a combination of new and used French oak barrels, and finally for two months in steel tanks before bottling.\u003c\/p\u003e\n\n \u003cp\u003eThe result is a dark, intense wine with depth and complexity.
