This vineyard is located 700 meters above sea level, which ensures a slow ripening process for the grapes and gives them a special aroma. The vines are not irrigated, resulting in small grapes with thick skins and a rich tannin structure. Fermentation takes place in temperature-controlled steel tanks using the grapes' natural yeast cells. After a malolactic fermentation, the wine is aged on its lees for about five months. To add extra body, 12% of the wine is aged in new French oak barrels.
