The Delmas family, who also worked at Cos d'Estournel, is responsible for the wine production. The château is famous for being the first in Bordeaux to produce wines with long aging potential by introducing longer aging periods and \"top-ups\" on the barrels. It is also believed that Château Haut Brion was the first to bottling château. The château has 50 hectares of vineyards, of which 3 hectares are dedicated to green grapes. Their white wine is a rare collector's item with only 500-600 cases available globally. The grapes are harvested at night to preserve acidity and reduce oxidation, and are carefully selected before pressing.
