Chardonnay is a permitted grape in Crémant production in Alsace, and the very old vines on the estate contribute a unique complexity and body to the wine. The first fermentation takes place in large wooden barrels, while the second fermentation in the bottle (Méthode Traditionelle) lasts for 18 months, which is twice the time required by law.\u003c\/p\u003e\n\n\u003cp\u003e The wine presents a delicate mousse with small, persistent bubbles reminiscent of those found in quality champagne.
