The grapes come from different plots in the Côte Châlonnaise, Côte de Beaune and Côte de Nuits, where the yield is kept to a maximum of 60 hl\/ha. The grapes are carefully picked in small boxes and quickly transported to the cellar to prevent crushing and oxidation. The grapes from each plot are treated separately to allow for individual pressing and fermentation.\u003c\/p\u003e\n\n \u003cp\u003eDuring the gentle air pressing, only the first part of the must, known as the \"Tête de cuvée\", is used, resulting in 75 liters of must from 150 kg of grapes. This low yield ensures a rich aroma, taste and concentration. The must is transferred to steel tanks to settle for 24 hours, and then to both wooden barrels (30%) and steel tanks for fermentation. After fermentation and a short resting period, the different wines are blended to form the \"vin de base\", which is bottled with yeast and sugar liqueur to start the secondary fermentation (Méthode Traditionelle), which lasts at least 12 months. The bottles are rotated on traditional champagne racks and finally disgorged.\u003c\/p\u003e\n\n\u003cp\u003e The result of this meticulous process is a Crémant de Bourgogne with fine, persistent bubbles and an inviting aroma. The fruity and slightly creamy character of Chardonnay is combined with the fresh and delicate style of Aligoté, enriched with nuances of white flowers.
