They later acquired Scharffenberger Cellars and launched the Carpe Diem series under Domaine Anderson. The winery cultivates three vineyards organically and biodynamically: Dach Vineyard, Walraven Vineyard and Pinoli Vineyards. Their philosophy is to create minimal intervention wines that reflect the Anderson Valley style with classic elegance.\u003c\/p\u003e\n\n\u003cp\u003e The wine\u003cbr\u003e Chardonnay Carpe Diem is made from grapes from Roederer's Anderson Valley estates. The grapes are picked at night and pressed immediately. The must undergoes spontaneous fermentation in steel tanks and French oak barrels and matures for 10 months in oak barrels. The wine presents a light golden color with aromas of lime blossom, honeydew melon, papaya, peaches, citrus fruits and grass.
