The grapes, which include Syrah, Mourvèdre, Grenache, Carignan, Cinsault and Tinta Barocca, come from some of the oldest vineyards in the Swartland. They are harvested at optimum ripeness and carefully sorted before being pressed in a traditional basket press. Fermentation takes place naturally in open wooden vats and the wine matures for 20-24 months in French oak barrels without filtration.\u003c\/p\u003e\n\n\n\u003cp\u003e Columella develops slowly in the glass, revealing layers of bright red berry fruit, Provençal spices and floral notes. The palate is silky smooth with an elegance and purity comparable to the finest wines of Burgundy. We recommend decanting the wine for 2-3 hours before serving at a temperature of 15-16 degrees.
