La Fosse is located at the foot of a slope on the western edge of the village, surrounded by the 1st Cru Marissou, Chapitre and Rabourcé. The vineyard’s drainage, with pebbles on the surface and limestone and clay in the depths, creates ideal conditions for both white and red wines. The vines develop deep roots to reach the water reserves, while the stony surface collects heat during the day and releases it at night.\u003c\/p\u003e\n\n\n \u003cp\u003eThe harvest is done manually and the bunches are sorted upon arrival at the cellar. After 100% destemming and gentle pressing, the grapes undergo a cool, spontaneous fermentation with the grapes' natural yeasts for approximately 30 days, followed by malolactic fermentation. The wine is then aged for 15 months, 12 of which are in traditional 228-liter Burgundy barrels (10% new).\u003c\/p\u003e\n\n\n\u003cp\u003e The red wines from La Fosse in Rully are characterised by a cool aroma and a taste with delicate fruit nuances and good depth. Jean-Baptiste Jessiaume's version has a beautiful, clear ruby ​​red colour and an aromatic nose with nuances of blackcurrant leaves, bird cherry, wild blackberry as well as violets and wild roses. The taste reflects the same notes and finishes charmingly and harmoniously.
