The grapes are hand-picked in October and undergo a drying process of 100-120 days. After destemming and pressing in January, a cold maceration and fermentation at temperatures between 18-25 degrees for 20-30 days follows. The wine matures for 4 years in 350-liter oak barrels and a further 8-10 months in bottle.
