They cover 80-85% of their grape needs from their own vineyards located in the Montagne de Reims, Vallée de la Marne and Côte des Blancs. A full 97% of these vineyards are classified as Grand Cru or Premier Cru. Louis Roederer is dedicated to sustainability and biodynamic methods, which has resulted in a DEMETER certification for the vineyards supplying grapes for Cristal.\u003c\/p\u003e\n\n \u003cp\u003eBrut Rosé from Louis Roederer is produced by traditional skin contact for the first 4-5 hours of fermentation, which gives the wine its delicate color. It consists of 30-38% Chardonnay and 62-70% Pinot Noir from some of Roederer's oldest vines in Cumières. The wine does not undergo malolactic fermentation, but 20-22% of it is matured in wooden barrels. Bottle fermentation lasts for 4 years, followed by a further 6 months of aging after disgorging. Liqueur de dosage, which amounts to 8-10 g per liter, is made from wines from Roederer's best Grands Crus vineyards.\u003c\/p\u003e\n\n\u003cp\u003e The wine offers a complex aroma of ripe red fruits and toasted bread. The palate is elegant with an aromatic finish.
