The grapes are picked in March with a low yield of 22-25 hl\/ha. The wine is fermented in open vats with frequent stirring and undergoes malolactic fermentation in small oak barrels. It is aged for 17 months in French barriques, 20% of which are new. The nose offers notes of plums, herbs and vanilla. The palate is fresh and well-structured with nuances of ripe plums, blackberries and spices. Although it has a style reminiscent of Rhône wines, it carries a distinct overseas character.
