Misty Cove uses the finest Pinot Noir clones: 777, 115, Abel and 667. The grapes are hand-picked from each individual plot as they ripen at different times. Each plot is vinified separately. After destemming and light pressing, the grapes are fermented in open vats with regular agitation. The wine is then gently matured in French oak barrels, 20% of which are new.\u003c\/p\u003e\n\n \u003cp\u003eThe aroma of this organic Pinot Noir reveals notes of raspberry, plum, spice and a slight mineral undertone.
