Each vineyard is treated individually during the vinification. The alcoholic fermentation takes about 3-4 weeks and takes place in steel tanks. Subsequently, the malolactic fermentation and maturation (about 2 years) takes place in a combination of French barriques and large Slavonian oak barrels. Some of the wines from the Barolo vineyards are selected for Vietti's Barolo Castiglione, while the rest are blended with the wines from the Barbaresco vineyards in large steel tanks just before bottling, creating Perbacco.\u003c\/p\u003e\n\n \u003cp\u003eThe wine presents itself with a beautiful, clear ruby ​​red color. The aroma is very open and complex, with notes of spearmint, violets and delicate red fruits, complemented by spicy nuances such as English liquorice and pepper. These aromas are also reflected in the taste, which is deep and structured. The wine has excellent aging potential with beautiful, rounded tannins in the aftertaste. An excellent Nebbiolo that will develop in complexity and elegance with a little maturation.
