Edouard Delaunay Bourgogne Pinot Noir September 2022

Edouard Delaunay's "Septembre" series offers both a Burgundy Chardonnay and a Burgundy Pinot Noir. The name "Septembre" is a tribute to the crucial ripening month in Burgundy. The Pinot Noir grapes come from three different areas: 75% from Côte de Nuits and Côte de Beaune, which contribute body, 20% from Couchois, which adds freshness, and 5% from Pierre Dorée, which provides fruit and color. This combination results in a harmonious wine with a fine balance between finesse, structure and body. The grapes are hand-picked and sorted upon arrival. Before fermentation, the grapes undergo a short cold maceration to highlight color, aroma and flavor. After fermentation, 50-60% of the wine is aged in used oak barrels to add structure and complexity, while the rest is aged in steel tanks to preserve the freshness and fruity character of the wine.
